Getting ready for Ribfest 2011

So my boyfriend's family has a huge family reunion every year!  This is the time of the year that the whole family is able to come out and visit.

Now that's a pretty huge family.  Here's the breakdown.  It all started with the Collin's children...

From left to right:  Dennis, Jack, Sandra, Trish, Mark & Eileen

Then they all get married and here's the picture with their spouses.

Sheila, Carol, Rod, John, Mary Jo & Paul

Everyone went on to have children, and their children went on to have children.

The Collins minus Andrew & Kathryn
The Campbells minus Kate, Daniel & Milena
The Stendzis
The Collins
They Hussey minus Cael
I thought I had a huge family but this is a huge family.  These family reunions are always so much fun.

During the family reunion, we also have a little competition and make it a rib-fest.  The idea is to have every household make ribs for everyone to try.  The catch is, that the sauce and rubs have to be homemade.

The winner of the best ribs gets to take home the pig trophy.  Last year's winner was Annie.  She got to take home the pig.

Every year, the competition gets stiffer and stiffer.  Everyone starts to think of the next recipe that they want to do in order to win the trophy.  Tim and I have been working hard and have tried many, many recipes.  After about 7 different recipes, I think we may have found it.

Here's what the ribs looked like before...

All I can tell you is that the ribs are really good.  My boyfriend approves so they must be good.  Can't give you the recipe just yet, cause the competition isn't until next week and I wouldn't want my recipe out there for the family to see!  Haha!  Once next weekend is over, I'll be sure to post the recipe for you all to try!

Cheers!
